Prepare the Cauliflower: Start by cleaning the cauliflower. Remove the green leaves and cut the cauliflower into florets. Place the florets in a colander and rinse them under cold water to clean them thoroughly.

Blanch the Cauliflower: Fill a large pot with water and bring it to a boil. Once the water is boiling, add the cauliflower florets and cook for about 5 minutes, until tender. Drain and set aside.

Sauté the Onion: Peel and finely slice the white onion. Heat a small amount of olive oil in a pan over medium heat. Add the onion and sauté it with a pinch of salt and black pepper. Stir occasionally and let it cook for 5–6 minutes, until softened and translucent.

Prepare the Radicchio: While the onion is cooking, clean the radicchio by removing the tough stem and slicing it thinly. Add the radicchio to the pan with the onions, and cook it for just a few seconds. You want to avoid wilting the radicchio too much, so keep it crisp. Crush the Pistachios: Place the unsalted pistachios in a mortar and use a pestle to crush them finely. Set them aside for later use.
