Baked Cheesy Rigati Pasta with Roasted Veggies

This deliciously comforting Baked Cheesy Rigati Pasta with Roasted Veggies is a twice-cooked pasta dish made with Del Monte’s Chifferi Rigati Pasta. The pasta is tossed in a creamy, mildly tangy pink sauce with roasted vegetables and baked to perfection. A hit for kids, this dish is both creamy and slightly tangy, making it a family favorite. Ingredients:

  • 200 grams Del Monte Chifferi Rigati Pasta
  • 1 Green zucchini, chopped into small pieces
  • 1 Carrot (Gajjar), chopped into small pieces
  • 1 Red Bell Pepper (Capsicum), chopped into small pieces
  • 2 tbsp Whole Wheat Bread crumbs
  • 2 tbsp Cheese, grated

For the sauce:

  • 1 Onion, finely chopped
  • 4 cloves Garlic, chopped
  • 1/2 cup Homemade tomato puree
  • 8 Basil leaves
  • 1 tsp Sugar
  • 1/4 cup Fresh cream
  • 1 tbsp Dried oregano
  • Salt, to taste

Preparation Time: 30 minutes

Cooking Time: 45 minutes

Instructions:

  1. Boil the Pasta: Start by boiling the Del Monte Rigati Pasta in a large saucepan filled with water. Add a pinch of salt and cook the pasta until itโ€™s al dente, meaning it should still have a bite to it. Once cooked, strain the pasta and rinse it under cold water. Drain well and drizzle olive oil over it to prevent sticking.

  2. Preheat the Oven: Preheat your oven to 200ยฐC (392ยฐF) for 10 minutes.

  3. Prepare the Sauce: In a saucepan, heat some oil and sautรฉ the finely chopped onions and garlic until the onions turn translucent. Add the chopped bell pepper, carrot, and zucchini. Cook the vegetables until they are soft and tender.

  4. Simmer the Sauce: Add the homemade tomato puree, dried oregano, sugar, and basil leaves. Let the sauce simmer for about 10 minutes until it thickens. Stir in the fresh cream and mix well.

  5. Combine Pasta and Sauce: Add the cooked Del Monte Rigati Pasta to the sauce and toss to coat the pasta evenly. Taste and adjust salt if needed.

  6. Bake the Pasta: Transfer the saucy pasta into a ceramic baking dish. Sprinkle with whole wheat bread crumbs and grated cheese. Bake in the preheated oven for 10-15 minutes, or until the cheese is golden and bubbly.
