Recipe: Baked Palamita with Cherry Tomatoes

Category: Main Dishes
Servings: 4

Ingredients:

Ingredient Quantity
Palamita fish (or similar fish) 700g
Cherry tomatoes (preferably datterini) 180g
Garlic 1 clove
Fresh rosemary to taste
Fine salt 6g
Lemons (preferably untreated) 25g
Black pepper to taste

Instructions:

  1. Prepare the Cherry Tomatoes: Begin by rinsing the cherry tomatoes thoroughly. Once cleaned, cut them in half and set them aside. These little bursts of sweetness will pair beautifully with the fish.

  2. Prep the Lemon: Take the untreated lemon, wash it well, and slice it into thin, even slices. The zest of the lemon will infuse a refreshing, aromatic note to the fish when placed inside it.

  3. Prepare the Palamita: Lay the whole palamita fish (or your chosen fish) on a flat surface. Open its belly gently, making space for the aromatic ingredients. Stuff the fish’s cavity with the thin slices of lemon, ensuring the fish is filled with flavor.

  4. Prepare the Parchment Paper: Take a large sheet of parchment paper, ensuring it is big enough to wrap the fish completely. This will help in baking the fish to perfection while retaining all its natural juices and aromas.

  5. Arrange the Fish: Place the prepared palamita in the center of the parchment paper. Surround it with the halved cherry tomatoes, placing them around the fish. Add a sprinkle of fresh rosemary and a light seasoning of salt and black pepper.

  6. Seal the Parchment Paper: Carefully fold up the parchment paper to enclose the fish. Twist and tie the ends of the paper with kitchen string, forming a pouch that resembles a candy wrapper. This will ensure that all the juices and flavors stay trapped inside, creating a moist and flavorful fish.

  7. Bake the Palamita: Transfer the parchment-wrapped fish onto a baking sheet. Place it in a preheated oven at 180°C (350°F) and bake for about 25 to 30 minutes, or until the fish is fully cooked and tender.

  8. Serve: Once baked, remove the palamita from the oven and carefully cut open the parchment paper. Be cautious of the hot steam. Serve the palamita immediately with the roasted tomatoes, ensuring each bite is packed with the delicious, aromatic flavors. Pair with a light salad or your favorite side dishes for a complete meal.

Tips:

  • For Extra Aroma: Add a few garlic cloves inside the fish cavity along with the lemon slices for an added depth of flavor.
  • Alternative Fish: If palamita is unavailable, you can substitute with other white fish like bass or sea bream.
  • Serving Suggestion: This dish pairs beautifully with a chilled glass of white wine, such as a crisp Sauvignon Blanc or Vermentino.

Enjoy your beautifully baked palamita with cherry tomatoes – a delicious, aromatic dish that combines simplicity with vibrant flavors!
