Spicy Fried Eggs (Telur Ceplok Balado)
Ingredients:
- 4 large eggs
- 2 tablespoons Blueband margarine or butter
- For the spice blend (finely blended with a bit of oil):
- 4 shallots
- 3 garlic cloves
- Red chili peppers to taste (I used a mix of curly red chilies and small red bird’s eye chilies)
- 1 tomato
- Vegetable oil, as needed
- Seasoning:
- Salt, to taste
- Granulated sugar, to taste
- Masako seasoning, to taste
- Sasa seasoning, to taste
Instructions:

Prepare the Eggs:
- Heat a skillet over medium heat and add the Blueband margarine or butter.
- Fry the eggs until the whites are crispy and golden brown, keeping the yolks slightly runny or cooked to your preference. Transfer the eggs to a plate and set aside.

Prepare the Spice Blend:
- Using a blender, blend the shallots, garlic, red chilies, and tomato with a small amount of oil until smooth. This will create a flavorful paste.

Cook the Spice Paste:
- Heat a little vegetable oil in a pan over medium heat.
- Add the blended spice paste and sauté until fragrant and the oil begins to separate from the paste.

Season the Paste:
- Sprinkle in salt, granulated sugar, Masako seasoning, and Sasa seasoning to taste. Continue cooking the paste until the seasonings are well incorporated and the paste is cooked through.

Combine Eggs and Spice Paste:
- Gently add the fried eggs to the pan with the spice paste. Stir carefully to coat the eggs with the flavorful paste.

Taste and Adjust:
- Taste the dish and adjust the seasoning if needed.

Serve:
- Transfer the spicy fried eggs to a serving plate. Enjoy them hot with your choice of rice or as a flavorful side dish.
