Bali-Style Spiced Eggs
Ingredients:
- 250 grams of boiled eggs (4 eggs), deep-fried until the skin wrinkles
- 8 shallots
- 4 garlic cloves
- 2 large red chilies
- Red chili peppers, to taste
- 3 roasted candlenuts
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 bay leaf
- Salt, to taste
- Sugar, to taste
- Bouillon powder or stock cube
- Water, as needed
Instructions:

Begin by deep-frying the boiled eggs until their skins are wrinkled. Set them aside to cool.

Next, grind the shallots, garlic, candlenuts, red chilies, and red chili peppers into a fine paste. Adjust the quantity of red chili peppers based on your spice preference.

Heat a pan with a little oil over medium heat. Sauté the ground spice paste until it becomes aromatic and slightly golden.

Add the bay leaf to the pan and stir well.

Carefully add the fried eggs to the pan, mixing them with the spices. Pour in a small amount of water, then add the sweet soy sauce and bouillon powder or stock cube.

Stir and cook the mixture until the water reduces slightly, allowing the flavors to meld together. Taste and adjust seasoning with salt and sugar as needed.
