    • 2 tablespoons sweet soy sauce (kecap manis)
    • Water, as needed

Instructions

  1. Prepare the Spice Paste:

    • Blend the curly red chilies, shallots, garlic cloves, ginger, red tomato, and candlenuts into a smooth paste.
  2. Cook the Spice Paste:

    • Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil begins to separate from the paste.
  3. Add Chicken and Seasonings:

    • Add the chicken pieces and galangal to the pan. Stir well to combine with the spice paste and cook until the chicken begins to change color.
  4. Simmer the Dish:

    • Pour in enough water to cover the chicken. Season with salt, sugar, and chicken seasoning to taste. Bring to a boil and then reduce the heat to a simmer.
  5. Add Eggs:

    • Once the chicken is cooked through and the water has reduced, gently add the hard-boiled eggs. Stir to coat the eggs with the sauce.
  6. Finish Cooking:

    • Continue to cook until the sauce thickens and most of the liquid has evaporated, leaving a rich, thick coating on the chicken and eggs.
