Ingredients:

  • 250 grams ground chicken
  • 1 handful grated coconut
  • 1 stalk lemongrass
  • Cooking oil
  • Ice cream sticks

For the Spice Paste (Bumbu Halus):

  • 5 shallots
  • 3 cloves garlic
  • 1 red chili pepper, seeds removed
  • 1 cm galangal
  • 1/2 cm lesser galangal (kencur)
  • 1 cm turmeric
  • 1/2 cm ginger
  • 1 tablespoon shaved palm sugar
  • Salt and chicken bouillon powder, to taste

Instructions:

  1. Prepare the Spice Paste:

    • Begin by making the spice paste. Blend together shallots, garlic, red chili pepper, galangal, lesser galangal, turmeric, ginger, palm sugar, salt, and chicken bouillon powder until smooth.
  2. Sauté the Spice Paste:

    • Heat a small amount of cooking oil in a pan over medium heat. Add the blended spice paste and the lemongrass stalk, then sauté until the mixture is fragrant and cooked through. Taste and adjust seasoning as needed. Remove the lemongrass stalk and set the cooked spice paste aside to cool slightly.
  3. Combine Ingredients:

    • In a large mixing bowl, combine the ground chicken, grated coconut, and the sautéed spice paste. Mix thoroughly until all ingredients are well incorporated.
  4. Shape the Skewers:

    • Take a portion of the chicken mixture and wrap it around the ice cream sticks, pressing gently to adhere. Ensure the coating is neither too thin nor too thick to ensure even cooking. Continue this process until all the mixture is used up.
  5. Grill the Skewers:

    • Preheat a non-stick skillet or a grill over medium heat. Lightly grease with a bit of cooking oil. Place the prepared chicken skewers on the hot surface and cook until the meat is fully cooked and has a nice char, turning occasionally to ensure even grilling.
  6. Serve and Enjoy:
