Title: Bali-Style Eggs and Tofu
Ingredients:
- 4 large eggs
- 11 small red chilies
- 4 shallots
- 3 cloves garlic
- 3 candlenuts
- Ground black pepper, to taste
- Ground coriander, to taste
- 1/2 tomato
- 2 bay leaves
- 2 kaffir lime leaves
- A small piece of ginger
- A small piece of galangal
- Salt, to taste
- 200 grams firm tofu
Steps:

Prepare the Eggs and Tofu:
- Boil the eggs until fully cooked. Once done, peel and fry them until the skins are crispy. Set aside.
- Cut the tofu into cubes and fry until golden brown and crispy. Drain on paper towels and set aside.

Make the Spice Paste:
- Blend the red chilies, shallots, garlic, candlenuts, ground black pepper, and ground coriander into a smooth paste. If needed, add a small amount of water to facilitate blending.

Cook the Spice Paste:
- Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until fragrant and slightly browned.

Add Aromatics and Tomato:
- Add the bay leaves, kaffir lime leaves, ginger, and galangal to the pan. Sauté for another minute.
- Dice the tomato and add it to the pan, cooking until it softens.

Combine Ingredients:
- Pour in a splash of soy sauce and stir to combine. Add the fried eggs and tofu to the pan, ensuring they are well-coated with the spice mixture.

Season and Simmer:
- Adjust the seasoning with salt and additional ground pepper, if necessary. Allow the mixture to simmer for a few minutes to meld the flavors.

Serve:
- Transfer the dish to a serving platter and enjoy it with steamed rice or as a flavorful side dish.
