Balinese Spiced Eggs #Ketopad

Ingredients:

  • 6 hard-boiled eggs, peeled and fried
  • 5 cloves garlic
  • 3 shallots
  • 5 whole bird’s eye chilies
  • 2 kaffir lime leaves
  • 4 red chilies
  • 3 more bird’s eye chilies
  • A thumb-sized piece of kencur (aromatic ginger)
  • A small amount of shrimp paste
  • Oil for sautéing
  • Salt, Diabetasol, and Royco seasoning to taste

Instructions:

  1. Prepare the Spice Paste: Begin by blending all the spices except the kaffir lime leaves until they form a smooth paste.

  2. Sauté the Paste: Heat a generous amount of oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant and the oil starts to separate from the paste.

  3. Add the Eggs: Carefully add the fried hard-boiled eggs to the pan. Stir gently to coat the eggs with the spice paste. Pour in a small amount of water to help create a sauce and add the kaffir lime leaves.

  4. Season and Simmer: Season with a little salt, Royco seasoning, and Diabetasol to taste. Allow the mixture to simmer, stirring occasionally, until the liquid reduces and the spices are well absorbed by the eggs.

  5. Serve: Once the sauce has thickened and the flavors have melded, transfer the dish to a serving plate. Enjoy your Balinese spiced eggs warm or at room temperature.

This Balinese Spiced Eggs recipe combines aromatic spices and rich flavors, perfect for a keto-friendly meal or a special occasion.
