    • Lemongrass stalk, smashed
    • Bay leaves (daun salam)
    • Galangal (laos), sliced
    • Ginger, sliced
  • Instant Balinese Spice Mix
  • Cooking Oil: For frying
  • Tomato: 1, chopped
  • Sweet Soy Sauce (Kecap Manis): 2 tablespoons

Instructions

  1. Prepare the Ingredients:

    • Cut the tempeh and tofu into bite-sized pieces according to your preference.
    • Boil the eggs until fully cooked, then peel and set aside.
  2. Prepare the Spicy Paste:

    • Blend or grind the shallots, garlic, and bird’s eye chilies into a smooth paste. For a more traditional approach, use a mortar and pestle for a richer texture.
  3. Fry the Ingredients:

    • Heat oil in a pan and fry the tempeh, tofu, and boiled eggs until golden brown. Be careful not to overcook them. Drain excess oil on paper towels.
  4. Cook the Aromatics and Spices:

    • In the same pan, add a little more oil if needed. Sauté the spicy paste until fragrant.
    • Add the lemongrass, galangal, ginger, and bay leaves to the pan. Continue to sauté until the spices release their aroma.
  5. Combine the Ingredients:

    • Add the fried tempeh, tofu, and eggs to the pan. Stir to coat them well with the spices.
    • Pour in about 2 cups of water and bring to a simmer. Stir occasionally.

    • Add the chopped tomato to the pan. Season with salt, sugar, white pepper, and chicken bouillon (Masako) to taste.
    • Stir in the instant Balinese spice mix and let the dish simmer until the flavors meld and the sauce thickens.
  7. Finish and Serve:

    • Drizzle in the sweet soy sauce (kecap manis) and adjust seasoning as needed.
    • Allow the sauce to reduce until it has a slightly thickened consistency. Remove from heat.
  8. Serving:
