Ingredients
- 1 tbsp olive oil
- 6 boneless skinless chicken breast halves
- 1 baby red potato
- 3 shallots
- 1/2 onion
- 2 cups broth
- 5 leeks
- 1 carrot
- 1/4 red bell pepper
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup balsamic vinegar
Instructions
Step | Description |

1 | In a large skillet, heat olive oil over medium-high heat. |
2 | Add the chicken and cook, turning, until golden brown on the outside and white throughout, about 10 minutes. |
3 | Remove the chicken to a plate. |
4 | Add potatoes and shallots to skillet and cook, stirring often, 2 to 3 minutes, until the shallots are soft. |
5 | Stir in the broth, scraping and loosening the brown bits on the bottom of the pan. |
6 | Add the leeks, carrots, and red pepper. Heat to boiling. |
7 | Reduce heat to medium-low and simmer for about 8 minutes, until the potatoes are tender. |
8 | Stir in the garlic powder, salt, pepper, and balsamic vinegar. Heat to boiling. |
9 | Return the chicken to the pan, spoon the sauce over the chicken, and cook over low heat for 2 to 3 minutes to heat through. |
