Instructions

Step 1: Prepare the Banana Stem

Step 3: Add Banana Stem

  1. Open the pressure cooker and add the chopped banana stem along with a pinch of salt.
  2. Cook for one more whistle and let the pressure release naturally.

Step 4: Prepare the Masala

  1. Heat a small pan and dry roast the coriander seeds for about 1 minute. Remove and set aside.
  2. In the same pan, add a little oil and heat it. Add cumin seeds and curry leaves, and sauté for 10 seconds until aromatic.
  3. Add the chopped onion and garlic to the pan and cook until the onions turn soft and translucent.

Step 5: Blend the Masala

  1. Allow the onion-garlic mixture to cool slightly.
  2. In a mixer grinder, combine the roasted coriander seeds, onion-garlic mixture, grated coconut, and a little water. Blend until you have a smooth paste.

Step 6: Combine and Cook

  1. Transfer the cooked banana stem and black gram to a pan.
  2. Add the ground masala paste, red chili powder, and salt. Mix well and bring the curry to a gentle boil.

Step 7: Finish with Lemon and Garnish

  1. Once the curry has boiled, turn off the heat and stir in the lemon juice.
  2. Garnish with fresh coriander leaves and chopped green chilies for a burst of color and flavor.
