Tomato Ketchup 2 tablespoons
Sugar 1 tablespoon
Garam Masala Powder 1 teaspoon
Onion 1 medium, finely chopped
Green Chillies 3, chopped
Fresh Coriander (Dhania) Leaves A handful, chopped
Puffed Rice As required
Oil As required for frying
Namkeen (Mixture) As required for garnish

Instructions:

  1. Prepare the Potatoes:
    Begin by boiling the potatoes in a pressure cooker with enough water and a pinch of salt. Cook them for about 3 whistles to ensure they are thoroughly boiled. Once done, allow them to cool down. Peel off the skin and mash them finely.

  2. Prepare the Spices:
    To the mashed potatoes, add cumin powder, red chilli powder, coriander powder, black pepper powder, garam masala powder, and both black salt and regular salt. Mix everything well to ensure the spices are evenly distributed throughout the potatoes.

  3. Stuff the Tomatoes:
    Take the fresh tomatoes and slice off the upper part. Gently remove the pulp of the tomatoes and reserve it for later. Stuff the hollowed tomatoes with the prepared mashed potato mixture, pressing gently to fill them well.

  4. Cook the Stuffed Tomatoes:
    Heat 2-3 tablespoons of oil in a flat pan over medium heat. Place the stuffed tomatoes in the pan with the potato-stuffed side facing down. Let them cook for 10-15 minutes, allowing the tomatoes to soften and become slightly mushy.

  5. Make the Tomato Paste:
    Once the tomatoes are cooked, turn off the heat. Transfer the stuffed tomatoes along with any remaining pulp into a blender or food processor. Grind them together into a thick paste.

    Return the pan to the stove and add a bit more oil. Once the oil is hot, pour the tomato paste back into the pan. Add some salt, sugar, and tomato ketchup. Cook the mixture over low heat for about 10-12 minutes, stirring occasionally to let it thicken and develop a rich, flavorful sauce.

    Transfer the cooked tomato chaat mixture into a serving bowl. Garnish with chopped onions, chopped green chillies, fresh coriander leaves, and a handful of namkeen for an extra crunch.
