  • 1/2 cup pine nuts
  • 2 celery ribs, diced or shredded

Instructions:

Step Description
1 Preheat your oven to 375ยฐF (190ยฐC) and cook the chicken until it’s tender and fully cooked, approximately 35 minutes.
2 Once the chicken is done, remove it from the oven and allow it to cool down to room temperature.
3 Dice or shred the cooked chicken into bite-sized pieces.
4 In a small skillet, brown the pine nuts over medium heat until they are golden and fragrant. Set aside.
5 In a food processor, combine the mayonnaise, fresh basil leaves, garlic clove, 2 tablespoons of pine nuts (not browned), and 2 tablespoons of parmesan cheese.
6 Puree the mixture until smooth and creamy.
7 Add the creamy mixture to the diced or shredded chicken and mix well to coat evenly.
8 Stir in the diced celery and the reserved browned pine nuts.
9 Make sure all ingredients are well coated with the creamy dressing.
10 For best results, refrigerate the chicken salad overnight to allow the flavors to meld together.
11 Before serving, sprinkle the remaining parmesan cheese and romano cheese on top for an extra burst of flavor.
