Ingredients:

  • 1 onion
  • 2 cloves garlic
  • 1 boneless skinless chicken breast
  • 2/3 cup diced eggplant
  • 1 green bell pepper
  • 1 can whole tomatoes
  • 1/2 teaspoon dried whole thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon cracked black pepper
  • 1/2 zucchini
  • 1/2 tablespoon cornstarch
  • 1/2 cup water
  • Cooked long-grain rice

Instructions:

  1. Prepare Ingredients: Begin by dicing the onion and mincing the garlic cloves. Cut the chicken breast into bite-sized pieces. Dice the eggplant and green bell pepper. Drain the whole tomatoes and roughly chop them.

  2. Sauté Aromatics: Coat a large nonstick skillet with cooking spray and add oil. Heat over medium-high heat until hot. Add the diced onion and minced garlic, and sauté until tender and aromatic.

  3. Cook Chicken: Add the chicken breast pieces to the skillet and sauté for about 3 minutes or until the chicken loses its pink color, stirring constantly to ensure even cooking.

  4. Add Vegetables and Seasonings: Incorporate the diced eggplant, chopped green bell pepper, whole tomatoes, dried whole thyme, paprika, salt, dried basil, and cracked black pepper into the skillet. Stir well to combine all the flavors.

  5. Simmer: Bring the mixture to a gentle boil, then cover the skillet with a lid. Reduce the heat to low and allow it to simmer for approximately 10 minutes, allowing the flavors to meld together.

  6. Thicken Sauce: In a small bowl, combine the cornstarch with water to create a slurry. Add this mixture to the skillet, stirring well to incorporate. Cover the skillet again and cook for an additional 5 minutes or until the zucchini is tender and the sauce has thickened slightly.

  7. Rest and Serve: Remove the skillet from the heat and let it stand for about 5 minutes to allow the flavors to further develop. Serve the Bayou Chicken over a bed of cooked long-grain rice, allowing each spoonful to soak up the delicious flavors.
