Instructions:

  1. In a large saucepan or stock pot, cover the pork ribs with cold water. Add thyme, salt, pepper, bay leaf, celery, and onion.

  2. Bring the mixture to a gentle boil. Cover the pot, reduce the heat, and let it simmer for about 45 minutes or until the ribs are tender.

  3. Remove the ribs from the pot and place them in a shallow glass dish. Set aside.

  5. For the sauce, in a small saucepan, combine all the sauce ingredients. Bring to a gentle boil, then reduce the heat and simmer for 15 minutes to blend the flavors. Let it cool.
