BBQ Chicken Quesadilla
Ingredients
- 6 ready-to-use tortillas
- 300 grams chicken breast fillets
- 1 large onion
- 2 carrots
- 50 grams mushrooms
- 100 grams finely grated cheddar cheese
- 100 ml barbecue sauce
- Margarine (for sautéing)

Prepare the Vegetables and Chicken:
- Dice the carrots and slice the mushrooms.
- Boil the chicken breast fillets until fully cooked, then shred into bite-sized pieces and set aside.

Cook the Filling:
- Heat a pan over medium heat and add margarine.
- Sauté the onion until it becomes fragrant and translucent.
- Add the shredded chicken, diced carrots, and sliced mushrooms to the pan.
- Pour in the barbecue sauce and cook briefly until all ingredients are well combined and heated through. There is no need to add extra salt or seasoning as the barbecue sauce provides ample flavor. Remove from heat and set aside.

Assemble the Quesadillas:
- Heat a flat skillet or griddle over low heat.
- Place a tortilla in the skillet and spoon a portion of the chicken mixture over half of the tortilla.
- Sprinkle with grated cheddar cheese.
- Fold the tortilla in half to cover the filling and cook, flipping occasionally, until the tortilla is golden brown and the cheese is melted. Be cautious not to let the tortilla burn, as it can cook quickly.
