Instructions:

  1. Begin by preparing the marinade. In a bowl, combine the chopped onion, cumin, fresh lemon juice, cider vinegar, minced garlic cloves, and diced jalapeno.

  2. Season the chicken breast with salt and pepper to taste.

  3. Place the chicken pieces into the prepared onion mixture, ensuring they are well coated. Allow the chicken to marinate in the mixture for at least 30 minutes to absorb the flavors.

  4. While the chicken is marinating, preheat your BBQ grill to medium heat.

  5. Once the chicken has marinated, carefully thread the marinated chicken, cherry tomatoes, pepper slices, pearl onions, and mushrooms onto skewers in alternating order, creating colorful and flavorful kebabs.

  6. Once assembled, place the skewers onto the preheated BBQ grill.

  7. Grill the kebabs, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred, approximately 10-15 minutes.
