Beef and Broccoli Stir-Fry with Sweet Soy Sauce

Stir-Fried Beef and Broccoli (Tumis Brokoli Sapi)

Ingredients:

  • 1 large head of broccoli (approximately 250 grams)
  • 250 grams of beef
  • 1 medium carrot
  • 1 onion
  • 4 shallots
  • 3 cloves of garlic
  • 4 red curly chilies
  • 4 green curly chilies
  • 3 bird’s eye chilies
  • 1 tomato
  • 1 bay leaf
  • A pinch of sugar
  • A pinch of salt
  • 1 tablespoon of sweet soy sauce (kecap manis)
  • 20 ml of oyster sauce
  • 1 tablespoon of cornstarch
  • Water, as needed
  • Cooking oil, as needed

Instructions:

  1. Prepare the Beef:

    • Begin by boiling the beef with the bay leaf until it becomes tender. Once cooked, slice the beef into finger-sized pieces and set aside.
  2. Prepare Vegetables:

    • While the beef is cooking, cut the broccoli into bite-sized florets and slice the carrot. Wash both thoroughly.
    • Slice the onion, garlic, shallots, red and green curly chilies, bird’s eye chilies, and tomato.
  3. Sauté the Aromatics:

    • Heat some cooking oil in a pan. Add the sliced onion, garlic, shallots, and chilies to the pan. Sauté until fragrant, adding the tomato last.
  4. Add the Beef:

    • Add the sliced beef to the pan. Stir in a small amount of oyster sauce and mix well.
  5. Cook the Vegetables:

    • Incorporate the carrot and broccoli into the pan. Stir-fry until the vegetables are just tender, but not overcooked.
  6. Flavor the Dish:

    • Add the sliced tomato and the remaining oyster sauce. Season with sugar, sweet soy sauce, and salt. Adjust the seasoning to taste.
  7. Thicken the Sauce:

    • Dissolve the cornstarch in a small amount of water and add it to the pan. Stir until the sauce thickens and the dish reaches a boiling point.
  8. Serve:

    • Once the sauce has thickened, remove from heat and serve hot.
