Instructions:

  1. Prepare the vegetables:
    Start by peeling, washing, and cutting the potatoes and Jerusalem artichokes into roughly 2 cm cubes. Set them aside.

  2. Blanch the vegetables:
    In a large pot, bring salted water to a boil. Once boiling, add the Jerusalem artichokes and cook for about 5 minutes. After 5 minutes, add the potatoes and continue to cook both for an additional 5 minutes. Drain the vegetables well.

  3. Preheat the oven:
    While the vegetables are cooking, preheat your oven to 180°C (350°F).

  4. Prepare for roasting:
    Line a baking tray with parchment paper and transfer the blanched potatoes and Jerusalem artichokes onto it. Drizzle with extra virgin olive oil and sprinkle with fine salt. Add the rosemary sprigs, making sure to scatter them evenly over the vegetables.

  5. Roast the vegetables:
    Increase the oven temperature to 200°C (400°F) and roast the vegetables for about 25-30 minutes, or until golden brown and crispy on the edges.

  6. Prepare the sausages:
    While the vegetables are roasting, take the sausages and prick them with a toothpick in several spots. This will prevent them from bursting while cooking.

  7. Cook the sausages:
    In a large skillet or frying pan, pour the beer and water. Bring to a gentle simmer over medium heat. Add the sausages and cook for about 15-20 minutes, turning occasionally until they are fully cooked through and infused with the beer flavors.

  8. Final touch:
    Once the sausages are cooked and the vegetables are golden and crispy, serve the sausages hot, alongside the roasted potatoes and Jerusalem artichokes. Drizzle with any remaining juices from the skillet for an added burst of flavor.
