Beetroot Tambuli, also known as “Sasive” in Kannada cuisine, is a delectable side dish commonly served with main meals. Yogurt (Curd) 1 cup
Coconut (Grated) 3/4 cup
Black Peppercorns 10 whole
Cumin Seeds (Jeera) 1/2 teaspoon
Green Chilies 2
Ginger (Chopped) 1 inch piece
Salt To taste
Fresh Coriander (Chopped) 2 teaspoons
Mustard Seeds (Rai) 1/2 teaspoon
Dry Red Chilies 1 to 2
Curry Leaves (Kadhi Patta) 1 sprig
Asafoetida (Hing) A pinch

Instructions:

  1. Prepare the Tempering:
    Heat oil in a pan or wok. Add cumin seeds and whole black peppercorns. Sauté for a few seconds until they release their aroma. Next, add chopped ginger and green chilies, and cook for another 15 seconds.

  2. Cook the Coconut Mixture:
    Add the grated coconut to the pan, and cook for about 2 minutes. Stir continuously to prevent burning. Let the mixture cool down before blending it in a blender until smooth.

  3. Cook the Beetroot:
    In the same pan, add a little more oil and grated beetroot. Add salt to taste and cook until the beetroot becomes soft and tender.

  4. Combine the Mixtures:
    Once the beetroot is cooked, add it to the blended coconut mixture. Blend again until everything is well-combined and smooth.

  5. Prepare the Raita:
    In a bowl, mix the yogurt (curd) with the beetroot and coconut mixture. Add salt to taste and stir until smooth and creamy. Ensure the raita is well-mixed and smooth.

  6. Prepare the Tadka (Tempering):
    In a small pan, heat oil for the tempering. Add mustard seeds, a pinch of asafoetida, curry leaves, and dry red chilies. Allow the spices to crackle and release their flavor. Pour this hot tempering over the prepared raita.

  7. Serve:
    Serve the Beetroot Tambuli (Raita) with hot rice, ghee, and sambar for a satisfying meal. The earthy flavor of beetroot combined with the creamy coconut and the tangy yogurt makes it a refreshing and flavorful side dish.
