Bengali Style Chori Recipe – Mixed Vegetable Sabzi

Ingredients:

  • 1 cup Ridge Gourd (Turai/ Peerkangai), chopped
  • 1 cup Kaddu (Parangikai/ Pumpkin), chopped
  • 1 cup Brinjal (Baingan / Eggplant), chopped
  • 1 cup Potatoes (Aloo), chopped
  • 2 Drumsticks, cut into 3-inch pieces
  • 1/2 cup Pointed Gourd (Parval), chopped
  • 1/2 cup Runner Beans, chopped
  • 1/2 cup Mooli (Radish), chopped
  • Mustard Oil, as required
  • 4 tablespoons Oil
  • 3 tablespoons Dijon Mustard
  • 3 Green Chilies, slit
  • 1/2 teaspoon Turmeric Powder (Haldi)
  • Salt, to taste
  • 1/2 teaspoon Asafoetida (Hing)
  • 1-1/2 teaspoons Panch Phoran Masala
  • 1/2 teaspoon Sugar

Preparation Time: 10 minutes
Cooking Time: 40 minutes

Instructions:

  1. Prepare Vegetables: Wash and chop all vegetables into small pieces. Set them aside.

  2. Prepare Mustard Paste: Soak yellow or black mustard seeds in 2-3 tablespoons of water for 15-20 minutes. Grind them into a fine paste and set aside.

  3. Cook Vegetables: Heat a non-stick wok and add all chopped vegetables along with turmeric powder and the mustard paste. Mix well, lower the flame, and cover with a lid. Let them steam for 5-10 minutes or until fully cooked.

  4. Temper Spices: In a separate wok or kadhai, heat refined oil and add asafoetida, panch phoran masala, and slit green chilies. Allow them to splutter.

  5. Combine: Add the cooked vegetables to the tempering and mix gently. Add salt to taste and sprinkle sugar. Stir carefully to avoid mashing the vegetables.

  6. Finish: Cook on high flame until the moisture evaporates and the vegetables appear dry. Optionally, drizzle 1-2 teaspoons of mustard oil for extra flavor, depending on your preference.

  7. Garnish and Serve: Garnish with chopped coriander leaves. Serve this Bengali Style Chori with Steamed Rice and Smoked Dal Makhani Dhaba Style for a complete meal.
