Choto Aloor Dum Recipe (Bengali Style)

- 1/2 kg small potatoes, boiled and peeled
- 1/4 tsp turmeric powder
- 1/4 tsp coriander powder
- 1/4 tsp garam masala powder
- 1/4 tsp red chili powder
- 1/4 tsp sugar
- Salt to taste
- 2 onions, chopped
- 2 tomatoes, chopped
- 2 green chilies, chopped
- 1/2 inch ginger
- 2 tbsp mustard oil
- 1/2 tsp cumin seeds
- Fresh coriander leaves for garnish

Cooking Time: 55 minutes
Instructions:
- Heat the Oil: Begin by heating mustard oil in a pan. Add cumin seeds and let them splutter for about 10 seconds.
- Prepare the Paste: In a blender, combine chopped onions, tomatoes, green chilies, and ginger. Blend into a smooth paste.
- Cook the Paste: Add the prepared paste into the pan along with salt and sugar. Stir well and cook for about 1 minute.
- Add Spices: Add turmeric powder, coriander powder, and red chili powder. Stir and let the mixture cook for 3-4 minutes.
- Add Potatoes: Add the boiled and peeled small potatoes to the pan. Mix well and add garam masala powder.
- Cook the Dish: Let the potatoes cook in the spice mixture for about 7-10 minutes.
- Garnish and Serve: Turn off the heat and garnish with freshly chopped coriander leaves.
