  • 3 cups fresh strawberries, sliced

Instructions:

Step Details
1 In a medium saucepan, combine water, milk, and rice.
2 Bring the mixture to a boil over medium heat.
3 Reduce the heat to low, cover, and simmer for 20 minutes, stirring occasionally.
4 Uncover the saucepan and cook for an additional 5 minutes.
5 In a small bowl, whisk together the egg yolk, 2 tablespoons of sugar, lemon juice, and 1/4 teaspoon of salt.
6 Gradually stir about 1 cup of the hot rice mixture into the yolk mixture. Then, return the combined mixture to the saucepan.
7 Bring the mixture to a gentle boil over medium-low heat.
8 Cook and stir for 3 to 4 minutes, or until slightly thickened.
9 Remove the saucepan from the heat and stir in the vanilla extract and 1/4 teaspoon of lemon zest.
10 Allow the pudding to cool thoroughly.
11 In a separate medium bowl, beat the egg whites and cream of tartar with an electric mixer on high speed until soft peaks form.
12 Gradually add 2 tablespoons of sugar, beating until stiff peaks form.
13 Gently fold in the sliced strawberries.
14 Spoon the pudding mixture into 8 sherbet dishes.
15 Cover the dishes and chill in the refrigerator for several hours, or until set.
16 To serve, garnish each dish with lemon zest and whole strawberries.
