Stuffed Grapefruit with Berries and Mint

Instructions:

Start by washing the grapefruits thoroughly. Afterward, dry them off and trim both ends. Cut each grapefruit in half.

Gently scoop out the flesh of the grapefruit, being careful not to detach the bitter white pith from the fruit. Collect the pulp and juice in a bowl. This will create 4 hollowed-out grapefruit halves.

Once hollowed, cover the grapefruit shells with plastic wrap and set them aside in the refrigerator to chill.

Next, place a fine mesh sieve over another bowl and pour the grapefruit pulp and juice into it. Gently press the pulp with a fork to extract the juice, making sure it is well filtered from the pulp.

Into the filtered grapefruit juice, add the sugar, stirring until fully dissolved.

While the juice is sweetening, prepare the berries. Rinse the raspberries, blackberries, and blueberries gently in a bowl of water to avoid damage from running water. Once cleaned, dry the blueberries and place them into the grapefruit juice. Do the same with the raspberries, adding them to the juice mixture.

Stir the berries and juice mixture together and cover the bowl with plastic wrap. Place the bowl in the fridge and let the flavors infuse for about 30 minutes.

After 30 minutes, remove the grapefruit halves from the refrigerator. Arrange them on a serving platter.

Spoon the berry mixture into the hollowed-out grapefruit halves, making sure each one is generously filled.

Drizzle any remaining grapefruit juice over the filled grapefruit halves for an extra burst of flavor.
