-
Prepare the Batter: Start by placing the brown sugar into a mixing bowl, and add in the eggs. Whisk them together until the mixture becomes smooth and well-combined. Related Articles
-
Mix the Dry Ingredients: Sift the all-purpose flour, cornstarch (Maizena), and baking powder into the bowl with the wet ingredients. Stir the mixture thoroughly until everything is incorporated.
-
Add the Hazelnut Flour: Gently fold in the hazelnut flour to enrich the batter with its nutty flavor and texture.
-
Prepare the Pan: Pour half of the batter into a 20 cm (8-inch) round cake pan, which is set on a baking sheet lined with parchment paper. Ensure that the batter is evenly spread across the bottom of the pan.
-
Bake: Bake the cake in a preheated static oven at 180°C (350°F) for 8 minutes. After this time, remove the pan from the oven, but do not turn off the heat.
-
Add the Jam: Once the cake is baked, spread the berry jam evenly over the surface of the partially-baked cake. Use a spatula to level it out for a smooth finish.
-
Final Baking: Return the cake to the oven and continue baking until fully set and lightly golden, which will take an additional 20-25 minutes.
-
Cool and Unmold: Once baked, allow the cake to cool slightly. To remove the cake from the pan, run a sharp knife around the edges to loosen it. Carefully invert the cake onto a serving plate.
-
Decorate: Place sheets of paper on top of the cake, leaving some areas exposed to create a geometric design. Dust the exposed areas with powdered sugar to give it a beautiful, delicate finish.
-
Serve and Enjoy: Your upside-down jam-filled cake is now ready to be served! The layers of soft cake and sweet fruit jam offer a delightful treat perfect for any occasion.
Pro Tip: For a different flavor profile, experiment with various fruit jams or preserves, such as apricot, raspberry, or strawberry, to suit your taste preferences.
