Instructions

  1. Prepare the Batter: Start by placing the brown sugar into a mixing bowl, and add in the eggs. Whisk them together until the mixture becomes smooth and well-combined.

  2. Mix the Dry Ingredients: Sift the all-purpose flour, cornstarch (Maizena), and baking powder into the bowl with the wet ingredients. Stir the mixture thoroughly until everything is incorporated.

  3. Add the Hazelnut Flour: Gently fold in the hazelnut flour to enrich the batter with its nutty flavor and texture.

  4. Prepare the Pan: Pour half of the batter into a 20 cm (8-inch) round cake pan, which is set on a baking sheet lined with parchment paper. Ensure that the batter is evenly spread across the bottom of the pan.

  5. Bake: Bake the cake in a preheated static oven at 180°C (350°F) for 8 minutes. After this time, remove the pan from the oven, but do not turn off the heat.

  6. Add the Jam: Once the cake is baked, spread the berry jam evenly over the surface of the partially-baked cake. Use a spatula to level it out for a smooth finish.
