    • 2 teaspoons soy sauce 🍶
    • 2 garlic cloves, minced 🧄
    • 1/4 cup cornstarch 🌽
    • 1/4 cup cold water ❄️
    • 1 cup pineapple chunks 🍍
    • 1 cup fresh mushrooms, sliced 🍄
    • 1 cup bamboo shoots 🎍
    • 1 cup water chestnuts, sliced
    • 1 bell pepper, cut into strips 🌶️

Instructions:

Preparing the Chicken Nuggets:

  1. Cut the Chicken: Begin by cutting the boneless, skinless chicken breasts into bite-sized nuggets.

  2. Marinate the Chicken: In a glass or plastic bowl, whisk together 1 egg, 1 tablespoon of cornstarch, 2 teaspoons of soy sauce, and 1/2 teaspoon of white pepper. Add the chicken chunks to the bowl, stirring to coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 20 minutes, although marinating overnight yields even better results.

  3. Prepare the Breading: When ready to cook, mix 1/2 cup of flour, 1/2 cup of water, 1/4 cup of cornstarch, 1 tablespoon of oil, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt in the bowl with the chicken and marinade.   3. Thicken the Sauce: In a separate container, mix 1/4 cup of cornstarch with 1/4 cup of cold water until smooth. Gradually stir this mixture into the boiling sauce. Continue to cook and stir for about 10-15 seconds until the sauce thickens.

  4. Add the Veggies and Pineapple: Stir in the pineapple chunks, fresh mushrooms, bamboo shoots, water chestnuts, and bell pepper strips. Bring the mixture to a boil again to ensure the veggies and pineapple are tender.
