Instructions

  1. Prepare the Steamer:
    Begin by filling the steamer with water and greasing the steamer plates.

  2. Grate the Bottle Gourd:
    Peel and grate the bottle gourd (lauki). You will need approximately 2 cups of grated bottle gourd, which should be squeezed to remove any excess water. This liquid can be saved for use in dals or rice, or consumed as a refreshing juice.

  3. Mix the Ingredients:
    In a large bowl, combine the cooked rice, gram flour, finely grated ginger, turmeric powder, asafoetida, red chilli powder, coriander leaves, grated bottle gourd, and oil. Use your hands or a masher to blend the mixture well. The mixture should form a firm dough-like consistency.

  4. Shape the Muthiyas:
    Divide the mixture into 15-20 equal portions. Shape each portion into small oval dumplings or, alternatively, form longer logs that can be sliced into rounds after steaming.

  5. Steam the Muthiyas:
    Place the shaped muthiyas on the greased steamer plates, ensuring they are spaced about an inch apart. Steam them on high heat for 15 minutes. After 15 minutes, turn off the heat and let the muthiyas rest for 5 minutes with the steamer lid open.

  6. Prepare the Seasoning:
    In a small pan, heat the oil over medium heat. Add the mustard seeds and sesame seeds, and allow them to crackle. Next, toss in the curry leaves and let them sizzle for a few seconds.

  7. Assemble and Serve:
    Drizzle the seasoning mixture over the steamed muthiyas. Garnish with grated coconut and chopped coriander leaves for an extra burst of flavor.

Serve these Bhaat Na Muthiya Dhoklas alongside a fresh Dhaniya Pudina Chutney and a glass of chilled Chaas for a perfect tea-time snack or a quick and healthy weeknight dinner. Their light, savory taste will make them a hit in any household.
