- 2 cups black gram (Kala Chana)
- 4 onions, thinly sliced
- 1 tsp ginger garlic paste
- 4 green chilies, chopped
- 1 tsp cumin seeds
- 1 bay leaf
- 1/2 tsp turmeric powder
- 1-1/2 tbsp red chili powder
- 2 tbsp ground coriander powder
- 1 tsp black pepper powder
- 1 tsp roasted cumin powder
- 1 tbsp mustard oil
- For Garnish:
- Chopped onions
- Chopped green chilies
- Grated and roasted coconut
- 1 tsp roasted cumin seeds

Soak the Black Gram: Begin by soaking the black gram (Kala Chana) in water for 8 hours. After soaking, drain the water.

Cook the Black Gram: Place the soaked black gram in a pressure cooker with salt and turmeric powder. Add enough water to cover the gram and cook for about 30 minutes or until the gram becomes soft.

Prepare the Paste: Take 1/4 onion and 2 tablespoons of cooked black gram. Grind them together in a mixer to form a smooth paste. Set it aside.

Cook the Base: Heat mustard oil in a pan. Add bay leaves and cumin seeds, and let them splutter. Then add the sliced onions and green chilies. Cook until the onions turn soft and golden.

Add Spices: Once the onions are soft, add ginger garlic paste and cook for 2 minutes. Now, add red chili powder, turmeric powder, ground coriander powder, black pepper powder, and the ground paste. Stir and cook for 3 minutes.

Combine the Ingredients: Add the cooked black gram to the pan. Mix everything together, then add salt and about 1/4 cup water. Let the mixture cook for 20 to 30 minutes. If the mixture dries up, add a little more water to reach the desired consistency.

Final Touches: Once the ghugni is cooked, garnish with roasted cumin seeds, chopped onions, chopped green chilies, and roasted coconut.
