Green Chilli 1, finely chopped
Red Chilli powder 1/2 teaspoon
Coriander Powder (Dhania) 1 teaspoon
Garam masala powder 1/2 teaspoon
Mustard seeds (Rai/Kadugu) 1/4 teaspoon
Cumin seeds (Jeera) 1/4 teaspoon
Fennel seeds (Saunf) 1/4 teaspoon
Methi Seeds (Fenugreek Seeds) 1/4 teaspoon
Kalonji (Onion Nigella Seeds) 1/4 teaspoon
Coriander (Dhania) Leaves 2 teaspoons, finely chopped for garnish
Oil 2 teaspoons (or as required)
Salt To taste

Instructions:

  1. Blanch the Green Peas:
    Start by blanching the green peas in hot water for a couple of minutes. Drain the water and set the peas aside.

  2. Roast the Makhana:
    In a dry pan, roast the phool makhana (lotus seeds) over medium heat for about 5 minutes, stirring occasionally. This step will help enhance the crunch and flavor of the makhana. Once done, remove from heat and set aside.

  3. Prepare the Spices:
    Heat oil in the same pan. Add the panch phoran (mustard seeds, cumin seeds, fennel seeds, methi seeds, and kalonji) to the hot oil. Sautรฉ them for a few seconds until the spices release a fragrant aroma.

  4. Sautรฉ the Onions:
    Add the finely chopped onion to the pan and sautรฉ until it turns translucent. This will take around 2-3 minutes.

  5. Add the Garlic and Tomatoes:
    Roughly pound the cloves of garlic using a mortar and pestle, then add them to the pan with the onions. Stir and sautรฉ until the raw smell of the garlic disappears.
    Next, add the chopped tomatoes and a pinch of salt. Cook the mixture until the tomatoes become soft and mushy.

  6. Spice it Up:
    Once the tomatoes are well-cooked, add the red chilli powder, coriander powder, and garam masala powder. Stir well to combine all the spices and let the flavors meld together for a minute or two.

  7. Combine the Green Peas and Makhana:
    Add the blanched green peas to the pan. Season with salt to taste and cook for about 3 minutes, allowing the peas to absorb the flavors of the spices.

  8. Add the Roasted Makhana:
    Now, add the roasted makhana (lotus seeds) to the pan and stir well to combine. Let the mixture cook for another 3 minutes, allowing the makhana to absorb the spices.

  9. Finish and Serve:
    Once the Bihari Makhana and Peas Sabzi is ready, turn off the heat. Transfer the sabzi to a serving bowl and garnish with finely chopped coriander leaves.

  10. Serving Suggestions:
