Savory Beef Black Pepper Stir-Fry
Ingredients:
- 300 grams of beef sirloin (thinly sliced while still frozen for ease)
- 1 onion, finely sliced
- 3 cloves of garlic, finely sliced
- 1 large red chili, sliced
- 1 large green chili, sliced
- 1/2 tablespoon soy sauce (for marinating the beef)
- 1 tablespoon sweet soy sauce
- 1/2 tablespoon soy sauce
- 1/2 tablespoon sesame oil
- 1/2 tablespoon oyster sauce
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt (sea salt recommended)
- 1/2 teaspoon sugar
- Water, as needed
- 1 tablespoon cornstarch, dissolved in water (to thicken the sauce)
- 3 tablespoons cooking oil for stir-frying

Marinate the Beef: Combine the sliced beef with 1/2 tablespoon of soy sauce. Let it marinate for a while to absorb the flavors.

Prepare Aromatics: Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the finely sliced garlic and half of the sliced onion. Sauté until fragrant.

Cook the Beef: Add the marinated beef to the pan. Stir-fry until the beef changes color and is almost cooked through.

Add Flavorings: Pour in enough water to cover the beef. Add the sweet soy sauce, soy sauce, sesame oil, oyster sauce, ground black pepper, salt, and sugar. Stir well to combine.

Simmer: Allow the mixture to cook until the beef is tender and the flavors meld together. Taste and adjust seasoning if necessary.

Add Vegetables: Incorporate the remaining sliced onion, red chili, and green chili. Stir until the vegetables are slightly wilted.

Thicken the Sauce: Pour in the cornstarch mixture, stirring continuously, until the sauce thickens to your desired consistency.
