Chewy Beef Meatballs Made with a Blender
Ingredients:
- 250 grams ground beef
- 50 grams ground chicken (optional)
- 1 egg white
- 4-5 small ice cubes
- 3 tablespoons tapioca flour
- 2 teaspoons garlic powder (or 2 cloves of fresh garlic, minced)
- 1 tablespoon fried shallots
- 1 teaspoon salt
- ½ teaspoon ground pepper
- ½ teaspoon mushroom or seasoning powder
- ½ teaspoon baking powder
- Water as needed
Instructions:

Prepare the Mixture:
- In a blender, combine the egg white, garlic powder (or minced garlic), fried shallots, salt, ground pepper, seasoning powder, and baking powder. Blend briefly to mix the ingredients.

Blend the Meats:
- Add the ground beef and chicken (if using) to the blender. Blend again until the mixture is well combined.

Incorporate Ice and Flour:
- Add the ice cubes and tapioca flour to the blender. Blend until the mixture reaches a smooth, paste-like consistency (not too runny). Transfer the mixture to a bowl.

Form the Meatballs:
- Bring a pot of water to a boil, then turn off the heat. Shape the meat mixture into meatballs, using a little oil on your hands or spoon to prevent sticking. Carefully drop the meatballs into the hot water. Repeat until all the meat mixture is used.

Cook the Meatballs:
- Once all the meatballs are in the water, turn the heat back on. Cook the meatballs until they float to the surface, which indicates they are cooked through. Let them boil for about 5 minutes.

Cool the Meatballs:
- Remove the cooked meatballs from the water and transfer them to an ice bath to cool for about 3 minutes. Drain and pat dry.

Storage and Use:
- The meatballs are now ready to be used in your favorite recipes or can be frozen for later use.
