Indonesian Beef Meatballs (Bakso Sapi) Recipe Using a Blender

Bakso Sapi, or Indonesian beef meatballs, are a beloved street food and a versatile ingredient in many dishes. This recipe simplifies the process by using a blender, making it accessible even if you don’t have a meat grinder. Here’s how to prepare these delightful meatballs:

Ingredients:

  • 250 grams of beef (preferably lean)
  • 35 grams of ice cubes (about 4 pieces, 2cm x 2cm in size)
  • 1 egg white
  • 3 tablespoons tapioca flour
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon baking powder
  • ½ tablespoon garlic powder (or 2 cloves of garlic, fried and minced)

Instructions:

  1. Prepare Ingredients: Begin by finely chopping the beef into small pieces. This helps the meat blend more smoothly and ensures an even texture in the meatballs.

  2. Blend Beef and Ice: Place the chopped beef into a blender. Add the ice cubes (make sure to crush the ice in the blender). Blend until the mixture is very smooth. The ice helps to achieve a smooth texture and keeps the mixture cold.

  3. Incorporate Egg White: Add the egg white to the beef mixture in the blender. Blend again until well combined.

  4. Add Dry Ingredients: Sprinkle in the tapioca flour, garlic powder (or minced fried garlic), salt, black pepper, and baking powder. Blend once more until everything is thoroughly mixed and the mixture becomes a soft, paste-like consistency.

  5. Mix and Knead: Transfer the meat mixture to a large bowl. Knead and pound the mixture with your hands or a spatula until it becomes smooth and cohesive, similar to a soft dough. This step is crucial for achieving the right texture for the meatballs.

  6. Shape Meatballs: Roll the mixture into small, evenly sized balls.

  7. Cook Meatballs: Bring a large pot of water to a rolling boil. Reduce the heat to a simmer and carefully drop the meatballs into the water. Cook until the meatballs float to the surface and are fully cooked through. This usually takes about 10-15 minutes.

  8. Cool Meatballs: Remove the meatballs from the pot and immediately transfer them to a bowl of ice water to cool down and stop the cooking process. Once cooled, drain the meatballs.

  9. Serve or Store: Your Bakso Sapi is now ready to be enjoyed. You can use these meatballs in a variety of dishes, such as a meatball soup, fried, or grilled. They can also be stored in the refrigerator for a few days or frozen for future use.

Enjoy the homemade Bakso Sapi as a flavorful addition to your meals! Whether served in a hearty broth or enjoyed as a savory snack, these Indonesian beef meatballs are sure to be a hit.
