Blueberry French Toast π«π
Description: π I got this recipe from a good friend and have fixed it several times, it is always a big hit. Prep time is actual hands-on time, but it needs to sit overnight and taken out of the refrigerator 30 minutes before baking. I’ve tried it without cubing the bread, and it works fine. You may also wish to decrease the cream cheese to 1 package instead of two; I’ve tried it both ways and think 1 package is plenty.

- Place half of the bread cubes in a greased 9″x13″ baking dish, enough to thoroughly cover the bottom of the baking dish.
- Cut the cream cheese into 1-inch cubes and place over the bread.
- Top with fresh and frozen blueberries and then add the remaining bread cubes on top.

- In a separate bowl, beat eggs, milk, maple syrup or honey together until well combined.
- Pour the egg mixture evenly over the bread and berries in the baking dish.

- Cover the baking dish and chill it for 8 hours or overnight in the refrigerator to allow the flavors to meld.

- Remove the baking dish from the refrigerator 30 minutes before baking to bring it to room temperature.
- Preheat the oven to 350Β°F (175Β°C).

- Cover the dish and bake for 30 minutes.
- Then, uncover it and bake for an additional 25-30 minutes, or until the top is golden brown and the center is set.

- In a saucepan, combine sugar and cornstarch, then add water and bring the mixture to a boil.
- Allow it to boil for 3 minutes, stirring constantly.
- Stir in the extra blueberries and reduce the heat.
- Simmer for 8 to 10 minutes or until the berries burst and the sauce thickens.
- Finally, stir in the butter until melted.
