Recipe Instructions:
-
Preheat Oven: Preheat your oven to 375 degrees Fahrenheit. Place the rack in the top third of the oven for even baking.
-
Prepare Muffin Pans: Generously butter 12 muffin cups or use two muffin-top pans, each with 6 (4- by 1/2-inch) muffin-top cups (1/2-cup capacity).
-
Prepare Batter: In a small saucepan, melt the unsalted butter over moderately low heat, then remove from heat. Whisk in the milk, followed by the whole egg, egg yolk, and vanilla extract until well combined.
-
Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, sugar, baking powder, and salt. Add the milk mixture to the dry ingredients and stir until just combined.
-
Fold in Blueberries: Gently fold in the fresh blueberries until evenly distributed throughout the batter.
-
Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, spreading it out evenly.
-
Prepare Topping: In a small bowl, combine the topping ingredients (unsalted butter, all-purpose flour, and sugar) using your fingertips until crumbly.
-
Top Muffins: Sprinkle the topping evenly over the batter in the muffin cups.
-
Bake: Place the muffin pans in the preheated oven and bake for about 18 to 20 minutes, or until the muffin tops are golden and a toothpick inserted into the center comes out clean.
-
Cool: Allow the muffins to cool in the pans on a wire rack for 15 minutes. Then, run a knife around the edge of each muffin top and carefully remove them from the cups.
-
Serve: Enjoy the muffin tops warm or at room temperature for a delightful treat!
