Ingredients:

Quantity Ingredient
2 eggs
2 cups all-purpose flour
3 tbsp sugar
1/4 tsp baking powder
2 tsp baking soda
2 cups natural yogurt
1 tsp salt
1/2 cup blueberries (optional)

Instructions:

  1. Beat eggs in a medium bowl with a hand beater until fluffy.

  2. Beat in the remaining ingredients just until blended.

  3. Grease a heated griddle if necessary.

  4. Test the griddle: Sprinkle with a few drops of water. If water bubbles skitter around, the heat is just right.

  5. Pour about 3 tablespoons of batter from the tip of a large spoon or from a pitcher onto the hot griddle for each pancake.

  6. Cook the pancakes until they are puffed and dry around the edges.

  7. Turn and cook the other sides until golden brown.

Serving:

  • Serve the pancakes hot with your favorite toppings such as maple syrup, honey, or additional fresh berries.
