Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon

  • 1/2 cup fat-free egg substitute
  • 1/2 cup eggs (about 3 eggs)
  • 1/2 cup canola oil

Instructions:

1 Preheat the oven to 375°F (190°C).
2 Spray a 12-muffin tin with non-stick spray or line with muffin liners. Set aside.
3 In a medium bowl, combine the all-purpose flour, baking soda, cinnamon, and salt. Set aside.
4 Drain the blueberries and reserve 1/3 cup of syrup.
5 Puree the blueberries and reserved syrup in a blender until smooth.
6 In a separate large bowl, whisk together the blueberry puree, brown sugar, egg substitute, and canola oil until well combined.
7 Add Bran Flakes to the wet mixture and mix well.
8 Gradually add the flour mixture to the wet ingredients, stirring until the dry ingredients are just moistened. Be careful not to overmix.
9 Gently fold in the blueberries until evenly distributed throughout the batter.
10 Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
11 Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
12 Once baked, remove the muffins from the oven and allow them to cool slightly before serving.
