Instructions

  1. Prepare the Blueberry Filling:
    In a medium saucepan, combine the water and cornstarch. Whisk over medium heat until the cornstarch is fully dissolved and smooth. Gradually add in the sugar and sugar substitute, continuing to whisk until smooth and lump-free.

  2. Bring to a Boil:
    Increase the heat slightly and bring the mixture to a gentle boil, stirring continuously to prevent the mixture from sticking to the bottom of the pan. Once boiling, add in the fresh blueberries and reduce the heat to a simmer.

  3. Thicken the Filling:
    Continue to cook the blueberry mixture, stirring constantly for 2–3 minutes, or until it becomes thick and bubbly. Once it reaches this consistency, remove the saucepan from heat and set aside to allow it to cool slightly.

  4. Prepare the Crumb Mixture:
    In a large mixing bowl, combine the oats and cake mix. Add 6 tablespoons of the butter, cutting it into the mixture using a pastry cutter or a fork until it becomes crumbly. Scoop out 1 cup of this crumb mixture and set it aside for later use as the topping.

  5. Create the Base Layer:
    To the remaining crumb mixture, stir in the egg whites until evenly combined. Press this mixture firmly into the bottom of a baking dish coated with nonstick cooking spray, forming a crust.

  6. Assemble the Dessert:
    Spread the warm blueberry filling evenly over the oat base, covering it completely.

  7. Make the Topping:
    In a separate bowl, take the reserved 1 cup of crumb mixture and combine it with the remaining oats and brown sugar. Add in the remaining 2 tablespoons of butter, cutting it into the mixture until crumbly. Sprinkle this mixture evenly over the blueberry layer.

  8. Bake the Treat:
    Preheat your oven to 350Β°F (175Β°C). Place the assembled dessert in the oven and bake for 30–35 minutes, or until the topping is golden brown and the filling is bubbling.

  9. Serve and Enjoy:
