Mutton Khichda Recipe – Bohri Khichda
A Deliciously Smooth Non-Vegetarian Khichdi with Mutton, Rice, and Wheat

Ingredients:

  • 1 Onion, thinly sliced
  • 200 grams Mutton, on the bone
  • 4 cloves Garlic, finely chopped
  • 1 inch Ginger, finely chopped
  • 1/3 cup Broken Wheat (Dalia/ Godumai Rava)
  • 1/4 cup Rice
  • 1/4 cup Chana dal (Bengal Gram Dal)
  • 1/4 cup Pink Masoor Dal (Split)
  • 1/4 cup Arhar dal (Split Toor Dal)
  • 1/4 cup Yellow Moong Dal (Split)
  • 2 Green Chillies, slit
  • Salt, to taste
  • 2 teaspoons Cumin powder (Jeera)
  • 2 teaspoons Ghee (for tempering)
  • 2 Onions, thinly sliced (for tempering)
  • 1/2 teaspoon Sugar
  • 1 teaspoon Garam masala powder
  • 3 sprigs Mint Leaves (Pudina), roughly torn
  • 1 teaspoon Lemon juice

Preparation Time: 70 minutes
Cooking Time: 20 minutes

Instructions:

  1. Begin by thoroughly washing the rice, broken wheat, chana dal, masoor dal, toovar dal, and moong dal. Soak them in water for about an hour.

  2. In a saucepan, add 1 cup of water, the mutton, sliced onion, ginger, and garlic. Bring it to a rolling boil, then turn off the heat. Let it rest for a while to allow the flavors to meld.

  3. Strain the mutton stock and set it aside, along with the boiled mutton pieces. Keep the mutton pieces aside for later use.

  4. In a pressure cooker, add the soaked and drained rice, broken wheat, chana dal, masoor dal, toovar dal, and moong dal. Add 2 1/2 cups of water, the green chilies, salt, and cumin powder. Close the lid of the pressure cooker and cook for 5 whistles. Afterward, reduce the flame and continue cooking for another 10 minutes. Turn off the flame and allow the pressure to release naturally.

  5. Once the pressure is released, open the cooker and mix in the mutton stock and the boiled mutton pieces.

  6. For the tempering: Heat ghee in a small pan. Add the thinly sliced onions and sauté until golden. Add the sugar, garam masala powder, and mint leaves, and cook for a minute until the aroma releases.

  7. Mix the tempered onions into the cooked khichda, adjust salt to taste, and add lemon juice. Stir well and serve hot.
