Definitely NOT your ordinary baked spuds! This is an English recipe and, in England, the end of the baking process would take place in the hot coals of an outdoor bonfire on Guy Fawkes’ night (November 5th).

Instructions:

- Using a sharp knife, make a zig-zag split down one side of each potato, ensuring not to cut all the way through.

- After 30 minutes of baking, carefully transfer the potatoes from the oven to the hot coals at the base of a fire.
- Allow the potatoes to finish cooking in the hot coals for about 1 hour, turning them occasionally for even cooking.

- The potatoes should be tender and easily pierced with a fork.
