Filet Mignon and Portobello Mushrooms with Bourbon Wine Sauce

1/4 lb Sausage
1 Smoked bacon
8 Shallots
2 cloves Garlic
1/2 cup Bourbon
5 Tomatoes
1 tbsp Butter
1 tbsp Worcestershire sauce
Salt and pepper, to taste
Hickory chips

Instructions:

  1. Prepare Steaks and Mushrooms:

    • In a bowl, mix 4 tablespoons of olive oil, red wine vinegar, salt, and pepper.
    • Let the steaks and mushrooms marinate in this mixture for about 20 minutes.
  2. Cook Sausage and Bacon:

    • Heat 3 tablespoons of olive oil in a pan.
    • Saute the sausage or bacon for about 3 minutes until browned.
    • Add shallots and garlic, and cook for an additional minute.
  3. Deglaze and Prepare Sauce:

    • Deglaze the pan with bourbon and carefully ignite it. Be cautious while doing this step.
    • Once the flames have burned off, add tomatoes and stock to the pan.
    • Stir in butter and Worcestershire sauce.
    • This step should be synchronized with cooking the steaks and mushrooms.
  4. Grill Steaks and Mushrooms:

    • When the grill is hot, place the soaked hickory chips on top.
