  1. Select the Perfect Peaches:
    Ensure you have the freshest peaches possible. It’s best if you have a relationship with a local orchard. I recommend Gold’s Orchard in Stonewall, Texas, where Lynette Gold provides excellent peaches. Make sure the peaches are freestone.

  2. Prepare the Peaches:
    Bring a large pot of water to a low boil. Meanwhile, prepare an ice bath. Place the peaches in the boiling water for approximately 2 minutes (adjust time based on peach ripeness). Remove and immediately transfer to the ice bath. Once cooled, peel and pit the peaches.

  3. Prepare the Syrup:
    In a separate pot, combine sugar, water, bourbon, cinnamon, nutmeg, and allspice berries. Bring to a boil, stirring until the sugar dissolves. Let it simmer until reduced by 1/3.

  4. Pack the Jars:
    Place the peeled and pitted peaches into clean, hot quart jars, packing them tightly.

  5. Add the Syrup:
    Ladle the hot bourbon syrup over the peaches, leaving about 1 inch of headspace at the top of each jar.

  6. Seal the Jars:
    Ensure the jar rims are clean. Place new seals and rings on the jars, screwing them tightly.

  7. Process the Jars:
    Place the filled jars in a boiling water bath for 45 minutes. The bourbon syrup should still be boiling when you remove the jars from the water bath.

  8. Cool and Store:
    Carefully remove the jars from the water bath and set them aside to cool. Once cooled, check the seals and store the jars in a cool, dark place.
