250ml Boiling water
120g Butter
180g Caster sugar
2 Eggs
250g Cake flour
3 tsp Baking powder
1 pinch Salt
125g Pecan nuts
125g Walnuts
5 tbsp Cake flour
5 tsp Ground cinnamon
250ml Water
375g Sugar
3 Cinnamon sticks
5 Cloves
3 Lemon peel strips
2 tbsp Butter
125ml Brandy

Instructions:

  1. Prepare the Date Mixture:

    • Pour boiling water over the dates and bicarbonate of soda in a bowl.
    • Allow the mixture to stand and infuse while you prepare the remaining ingredients.
  2. Prepare the Batter:

    • Cream together the butter and caster sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Sift 250ml of cake flour with baking powder and salt, then gradually add it to the butter-sugar mixture, stirring until well combined.
    • Stir in the prepared date mixture along with the pecan nuts and walnuts.
    • In a separate bowl, sift together 125ml of cake flour with ground cinnamon and ground ginger, then fold this into the batter until evenly incorporated.
  3. Bake the Pudding:

    • Preheat your oven to 180°C (350°F).
    • Pour the pudding batter into a well-buttered pie dish, spreading it out evenly.
    • Bake in the preheated oven for approximately 45 minutes, or until the pudding is golden brown and cooked through.
  4. Prepare the Brandy Syrup:

    • While the pudding is baking, prepare the brandy syrup by combining water, sugar, cinnamon sticks, cloves, lemon peel strips, and butter in a saucepan.
    • Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes, allowing the flavors to meld together.
    • Remove the syrup from the heat and stir in the brandy, creating a fragrant and intoxicating syrup.
  5. Assemble and Serve:
