Instructions:

  1. Prepare the onions and oranges:
    Start by thinly slicing the white onions, aiming for slices that are not too thin. Season the onions with a pinch of salt and freshly ground black pepper. In the meantime, use a vegetable peeler to carefully remove the zest of one orange. Try to avoid peeling the bitter white pith as much as possible. Cut the orange zest into thin strips. Next, place the zest in a small saucepan with a splash of water and blanch it for a few minutes to soften. Once done, drain the zest and set it aside.

  2. Cook the branzino fillets:
    If you haven’t already, have your fishmonger fillet the branzino for you, or do it yourself at home.
