Instructions:

  1. In a Dutch oven, melt butter and margarine over medium heat. Add chopped green onion, onion, and celery, sautéing until tender and fragrant.

  2. Pour in water and chicken broth, then add diced potatoes. Cover and simmer over low heat for approximately 15 minutes, or until the potatoes are fork-tender.

  3. Using a ladle, carefully transfer half of the soup mixture into the container of an electric blender. Process until smooth, then pour the pureed mixture back into the Dutch oven.

  4. Repeat the blending process with the remaining half of the soup mixture until all the soup is smooth and creamy.

  5. Remove the skin from the Brie cheese and cut it into chunks. Add the Brie, milk, salt, white pepper, and dried marjoram to the Dutch oven.

  6. Increase the heat to medium and cook the soup, stirring constantly, until the cheese is fully melted and the soup is heated through. Ensure that the cheese is well incorporated into the soup for a smooth and creamy texture.

  7. Once the soup is hot and bubbling, it’s ready to serve!

Tips:

  • For added creaminess, use whole milk or half-and-half instead of low-fat milk.
  • Adjust the seasoning according to your taste preferences. You can add more salt, pepper, or herbs to enhance the flavor.
  • Garnish each serving with a sprinkle of freshly chopped celery leaves for a burst of freshness and color.
  • This soup pairs wonderfully with crusty bread or a simple green salad for a complete meal.

Indulge in the comforting goodness of this Cream of the Crop Celery Soup, perfect for chilly days or anytime you crave a cozy bowl of homemade goodness! 🥣🧀🌿
