Instructions:

Step Instruction
1 Preheat your broiler to high heat.
2 Grease 6 small, individual baking dishes with about 1 tablespoon of extra virgin olive oil and set them aside.
3 Cut the mozzarella cheese into 6 equal slices and arrange them in the prepared baking dishes.
4 Pour a small amount of cold water into each dish, just enough to cover the cheese slightly. Holding the cheese in place, carefully pour off the water.
5 Place the dishes under the broiler, about 6 inches from the heat source.
6 Broil for about 5 minutes, keeping a close eye on the cheese. The mozzarella should be golden brown and bubbly, but be careful not to let it burn.
7 Once done, remove the dishes from the oven and immediately drizzle each with 1 teaspoon of olive oil, 1 teaspoon of lemon juice, and sprinkle 1/2 teaspoon of chopped mint leaves on top.
8 Serve immediately while the cheese is hot, paired with bread for scooping up the melted mozzarella. Enjoy!

Serving Suggestions:
This dish can be served as an appetizer or side, especially with a light salad or some crusty bread for dipping into the melted cheese. You can also add a sprinkle of red pepper flakes or extra mint for added flavor if desired.

Tips:

  • For a bit more depth of flavor, try using flavored olive oil, like garlic-infused or chili oil, to broil the cheese.
  • This dish can be served warm, but it also makes a delicious cold snack if you have leftovers.
