6 slices bacon
6 onions
1/2 pound mushrooms
4 carrots
1 cup chicken broth
1 garlic clove

1/2 teaspoon bay leaf
1/2 cup parsley

Instructions:

  1. Prepare Coating: In a paper or plastic bag, mix flour, salt, and pepper. Drop chicken pieces into the bag and shake until coated evenly.

  2. Brown Bacon: In a large skillet, fry bacon until crisp. Drain and set aside the bacon bits.

  3. Brown Chicken: Brown the chicken in the bacon drippings until golden. Once done, transfer the chicken to a plate.

  4. Sauté Vegetables: Add onions and mushrooms to the skillet and cook until the onions turn tender. Drain off any excess fat.

  5. Combine Ingredients: Return the chicken pieces to the skillet (or transfer to a large oven-proof baking dish). Add the remaining ingredients, including the reserved bacon bits.

  6. Simmer: Cover and simmer the dish for about 1 hour or until the chicken becomes tender. Alternatively, cover and bake at 350°F for 1 to 1 1/2 hours.
