Burnt Garlic Chicken Fried Rice Recipe (Indo Chinese Fried Rice)

Burnt Garlic Chicken Fried Rice has a distinct, slightly bitter yet nutty flavor that beautifully complements Chinese spices and soy sauce, offering a delightful Indo-Chinese fusion.

Ingredients:

  • 200 grams Boneless chicken
  • 12 cloves Garlic
  • 2-1/2 cups Cooked rice
  • Extra Virgin Olive Oil, as required
  • 1/2 teaspoon Whole Black Peppercorns, crushed
  • 3 Green Chillies, sliced
  • 1-1/2 teaspoons Soy sauce
  • 1/2 teaspoon Vinegar

For the Burnt Garlic:

  • 9 cloves Garlic, sliced
  • 1 teaspoon Extra Virgin Olive Oil

Preparation Time: 20 minutes
Cook Time: 20 minutes

Instructions:

  1. Heat oil in a wok or kadhai over medium heat. Add chopped garlic and sauté for about 1 minute, ensuring it doesn’t brown.
  2. Add onions and sauté until translucent, about 2 minutes.
  3. Add the chopped boneless chicken (preferably sliced thin) to the wok and sauté until the chicken is tender, being careful not to overcook it.
  4. Add salt, sliced green chillies, crushed black pepper, soy sauce, and vinegar to the chicken. Sauté for another 1 minute.
  5. Add cooked rice, mixing gently to avoid breaking the rice. Older rice works best for fried rice. Turn off the flame.
  6. In a separate small pan, heat olive oil and add the sliced garlic. Fry until the garlic turns a deep brown.
  7. Pour half of the burnt garlic into the rice and mix well. Taste the rice and adjust the seasoning as needed.
  8. Garnish with the remaining burnt garlic before serving.
