Prepare the Toasted Bread
Begin by slicing the bread into 2-3 cm thick slices. Arrange the slices on a baking tray lined with parchment paper. Drizzle them with a bit of extra virgin olive oil, and season with salt and black pepper.
Toast the bread in a preheated oven at 240°C (464°F) with the grill function on for 3-4 minutes, or until the slices are golden and crispy. Once done, remove from the oven and set aside to cool. -
Prepare the Vegetables
For the fava beans, open the pods and place the seeds in a bowl. Cut a small incision on the top of each fava bean and gently remove the outer skin.
Wash the carrots thoroughly, cut off the ends, and peel them using a vegetable peeler. Grate the carrots finely, and then slice them into very thin rounds.
Wash and thinly slice the radishes. -
Make the Dressing
In a tall, narrow glass, pour the 50g of extra virgin olive oil. Add the fresh mint leaves (7-8 leaves), ensuring they’re clean and dry. Season the oil with salt and pepper, then stir gently to combine the flavors. This infused oil will add a fragrant, herbal touch to the vegetables. -
