Ingredients:

  • 1 3/4 cups water
  • 1 cup sugar
  • 1 cup blackberries
  • 1 cup raspberries
  • 3/4 cup fresh blueberries
  • 1 cup orange juice

Instructions:

Step Description
1 In a medium saucepan, bring water, sugar, and the blueberries to a boil.
2 Cook and stir until the sugar is dissolved and the blueberries are tender, which usually takes 1 to 2 minutes.
3 Remove from heat and drain the berries, reserving the liquid; set it aside to cool.
4 Meanwhile, in a food processor bowl or blender container, combine the blackberries and raspberries.
5 Cover and process or blend until smooth.
6 Press the pureed berries through a fine-mesh sieve to discard the seeds.
7 Place the blueberries and 1/3 cup of the reserved cooking liquid (do not discard the remaining liquid) in the food processor bowl or blender container.
8 Cover and process or blend until almost smooth.
9 Press the blueberry mixture through the fine-mesh sieve to discard the skins.
10 In a large bowl, combine the pureed mixtures, remaining cooking liquid, and orange juice.
11 Cover and refrigerate for 2 hours or until the mixture is completely chilled.
12 Freeze the mixture in a 4- or 5-quart ice cream freezer according to the manufacturer’s directions.
13 Ripen for 4 hours.
14 Use within 2 days.
15 Serve individual scoops of sorbet with fresh berries, if desired.
